Winemaking and Elevage
We harvested our Sauvignon blanc in two separate picks, the first pick was pressed whole cluster and split between stainless steel and neutral French oak barrels for fermentation. The second pick was crushed to tank and allowed to macerate over-night; once pressed the must went into stainless steel tank, concrete tank, and French oak and acacia barrels. The components were aged sur lees for 8-months before blending and bottling. The final blend is 60% stainless steel, 30% barrel, and 10% concrete, it is this manifold regimen that is responsible for the complexity of our wine.
